This is a reminder to always try and be the best version of yourself, so you can be the human version of somebody's first bite of chocolate cake! Sometimes deliciousness and human versions of chocolate cake are much needed in our lives. Suggestion: make somebody's day and bake them this cake!
Good news for our gluten-free friends! This might literally be your first bite of chocolate cake because it is gluten-free! :-)
Always make sure that all ingredients you are using are gluten-free.
Dough (for both layers): 4 eggs - 2 sticks butter melted (250g) - 1 cup buttermilk (240ml) -
2 tsp vanilla (sugar) - 2 cups sugar (440g) -
1 1/2 cups brown rice (250g) (use a grain mill, grind brown rice on
the finest setting to get rice flour) - 1 Tbsp baking powder -
1/3 cup corn or potato starch (40g) - 4 Tbsp guar gum -
2/3 cup cocoa powder (80g)
Cream layer /frosting: 3 cups low fat quark (750g) - 1 cup whipping cream (200ml) -
1/2 cup mascarpone (120g) - 2 packets gelatin powder (18g) -
3 tsp vanilla (sugar) - 1/2 cup sugar (100g)
Decoration: 1/2 cup dark chocolate chips (90g chocolate)- 3.5 pounds strawberries (1,5kg)
