And this doesn't only count for baking! In your every day life you decide if you concentrate on negative things and are getting angry and stressed all the time OR if you focus on the positive things and try to find the good stuff even in little situations.

To contribute to a happy day, cupcakes are always a solution! So let's make some extra yummy  Oreo Cupcakes and start thinking about what else makes your days happier. 

Recipe:
Ingredients:
Dough: 250ml / 1 cup buttermilk - 2 eggs - 1 packet vanilla sugar / 1 Tbsp vanilla 
            - 125ml / 1/2 cup sunflower oil - 440g / 2 1/4 cups sugar -
              1 espresso cup freshly made espresso - 240 g/ 2 cups flour -
             - 3 tsp baking powder - 90g / 3/4 cup dark cocoa powder   

Frosting: 1 stick butter (110g) - 8oz cream cheese (250g) - 1 1/3 cups powdered sugar ( 150g) -
                1 Tbsp custard powder - 1/3 cup whipped cream (80ml)

Decorations: 20 Oreos
Instructions:
1a) In a bowl mix together the eggs, buttermilk and oil.

1b) Add the baking powder to the flour, then incorporate it in the dough.

1c) Blend in the sifted cocoa powder.

1d) Now add the sugar and vanilla (sugar) and mix again.

1e) Brew an espresso cup of espresso and blend it in the dough.

1f) Fill the dough into cupcake paper tins and bake at 160°C/320°F for approx. 20-24min.

2a) For the frosting, mix the butter (must be at room temperature) until it's fluffy.

2b) Add cream cheese and mix again.

2c) Then sift the powdered sugar and custard powder and incorporate it into the mixture.

2d) In a different bowl, whip the cream using a mixer.

2e) Fold in the whipped cream into the frosting. If you like, crush some Oreos in tiny(!) pieces and add them.

2f) Using a frosting bag spread the frosting on top of the cupcakes.

2g) Finally decorate the cupcakes with Oreo Cookies and most importantly...   enjoy!

Oreos make me smile and a cupcake with Oreos is a neat combination, I will try these this weekend for our Sunday Family Gathering :)
