Oktoberfest-style Cupcakes - Germany

Festivities happening in October? Yes, Halloween of course but before that: Oktoberfest! For your own little Oktoberfest at home, at work or pretty much anywhere else, these Oktoberfest-style pretzel Cupcakes are the perfect bavarian treat.

Find fun cupcake paper tins to make these Oktoberfest-style Cupcakes and get all crazy by combining salty pretzels and the sweet taste of chocolate. You might be skeptic about the salty-sweet combination but I promise, it's so worth trying!
Recipe: / Rezept:
For the gluten-free version use gluten-free flour (rice-corn flour) instead and add 1/2 tsp of xanthan to the dough. Also use gluten-free salted pretzels instead of the "normal" ones.

Instructions:
1a) Separate the egg whites from the egg yolk:

1b) Using the mixer, mix the egg whites until they look like a firm foam:

1c) Make a waterbath and melt the chocolate in it.

1d )When the chocolate is  melted add the butter to it and wait till it's melted as well:

2a) Add sugar, vanilla sugar and cinnamon to the egg yolks and mix for 1 minute until everything is blended:

2b) Add the chocolate-butter mixture and mix again.

2c) Mix flour and baking powder together and then add it to the dough and blend:

2d) Using a whisk, fold the beaten egg whites into the dough:

2e) Fill the dough into paper cupcake tins and bake at 160°C/320°F for 20-25 min.

3a) While the cupcakes are cooling down we start mixing the butter (room temperature!) for the frosting

3b) When the butter is all fluffy, the cream cheese and mix. Then add the powdered sugar and mix again..

3c)..until it looks like this:

3d) Using an icing bag spread the frosting on top of the cupcakes and decorate them with little salt pretzels! Buon Appetito!
