(Gluten-free!) OREO-frosted Chocolate Cupcakes

The photo is taken of the gluten-free option I made!
Make sure you try out these amazing Oreo-frosted Cupcakes! I'm proud to say the frosting came pretty close to the frosting of my favorite cupcake at my favorite cupcake cafe. And great news for our gluten-free eating friends, the recipe works with gluten-free flour and you can buy gluten-free Oreos for the frosting/decoration.

Recipe/ Rezept:
​Gluten-free version: Always make sure that all ingredients you are using are gluten-free.

Instructions:
1a) Start by putting flour, baking powder, baking soda, cocoa powder and salt in a bowl.

1b) Mix the ingredients with a spoon.

1c) In a different bowl add an egg and another egg yolk.

1d) Add oil, sugar, vanilla (sugar) and blend everything using a mixer.

1f) Then incorporate the dry ingredients from the first bowl.

1g) Add hot water and mix again. Let the dough cool down some moments.

2a) In the meantime prepare the baking tray with cupcake paper tins.

2b) Then fill the dough into the paper tins and bake at 320°F/160°C for 18-20min.

2c) Use a fork to test if the cupcakes are fully baked (no dough sticking on fork).

2d) When the cupcakes have cooled down, cut out little squares from the center of the cupcakes.

3a) For the frosting we need a bunch of yummy Oreo cookies*-*

3b) Crush the Oreos until they are very small, either with a food processor that can handle cookies or just put them in a plastic bag and crush them with a rolling pin.

3c) For the frosting, mix the whipping cream using a mixer. Careful, don't overmix, otherwise you'll have butter.

3d) In a different bowl mix the butter...

...until it's fluffy/creamy. If you can still see butter pieces wait a bit longer until the butter gets a softer.

3e) Add cream cheese to the butter and mix again.

3f) Then incorporate the powdered sugar and whipping cream.

4a) Fill the cupcakes holes you made earlier with a teaspoon of frosting.

4b) Don't lick the bowl yet! :D The rest of the frosting will be combined with the crushed Oreos now.

4c) Stir the mixture with a spoon until it is well combined.

4d) Use a frosting bag to decorate the cupcakes with the yummiest Oreo frosting.

4e) Add extra Oreos for decoration on top if you like.

4f) Tadaa! Your chocolate - Oreo -frosted Cupcakes are ready!! Put them in a fridge so the frosting doesn't get too soft.
