Happy Valentines day! Happiness is only a piece of cake away, especially when it's made with extra love like this one. I actually already made it a day before and shared it with people who just really deserved it, no holiday needed. If you're looking for a way to show some love and gratefulness for people around you, give this red velvet cake a try!

Recipe /Rezept:
For the gluten-free version replace 'normal' flour with gluten-free flour and make sure to check if your other ingredients are gluten-free, especially the food coloring and eatable decorations.

Instructions:
1a) Start by separating the eggs.

1b) Using a mixer beat the egg whites until they are a firm foam. Then put it in the fridge.

1c) Add the soft butter, sugar, vanilla sugar, canola oil and distilled vinegar to the egg yolks and mix.

1d) Pour in the buttermilk and mix again.

1e) Sift the flour and add the baking soda.

1f) Then add the cocoa powder and salt and mix.

1g) To make it a nice red velvet color, add liquid food coloring.

1h) Add food color until you are happy with the color for you cake. Don't add too much though, so your cake won't taste like color.

1i) Fold in the beaten egg whites using a whisk. Then prepare two baking pans with baking paper..

1j) Fill the dough into the two baking pans. Then bake them at 320°F/160°C for approx. 30min.

2a) When the cake has cooled down, we start making the frosting. Mix the butter (room temperature!) until it's fluffy.

2b) Add the cream cheese and mix again.

2c) Sift in the powdered sugar and vanilla (sugar) and mix.

2d) When the frosting looks extra creamy it's ready to be spread on the cake.

3a) Cut off a thin top layer of the first cake.

3b) Spread half of the frosting on top of the first cake..

...until it's distributed like this.

3c) Put the second cake on top.

3d) Spread the rest of the frosting on top and a bit around the sides of the cake.

3e) Use your favorite sugar sprinkles to decorate the cake.

3f) Put the cake in the fridge so the frosting won't become too liquid. Buon appetito!
