S'mores Cake - Canada/ USA

Which other countries are s'mores typical of? Personally I fell in love with them in the US and Canada during BBQ and bonfire nights. If you are equally bad at waiting for the next BBQ to eat them, try this cake recipe: marshmallows, cookies and chocolate make an extra yummy combination on a cake as well!

Recipe / Rezept:
The left column of the recipe is for smaller cakes (7  or 8 inch diameter/ 20cm) and the right one for bigger cakes (11 inch diameter /28cm).

1a) In a bowl mix together the sugar, vanilla (sugar), eggs, sunflower oil, milk and hot water.

1b) Add baking powder and baking soda to the flour and incorporate the mixture into the dough.

1c) Sift cocoa powder and blend it in

1d) Prepare 2 baking tins with baking paper & distribute the dough among both. Don't panic if you only have one baking tin :D Bake one cake first, then...

1e)...carefully remove it from the baking tin with the help of the baking paper, put new baking paper & bake the second cake. Bake at 320°F /160°C for 35-40min.

1f) Let the cakes cool down. Then: in order to get a good snack :P and also for an even surface, cut the top of the first cake off, where necessary.

2a) For the first frosting whip the cream. When it's firm and fluffy add the cream cheese & finally sift in the powdered sugar & mix again.

2b) For real chocolate lovers: cut some extra chocolate in little pieces,  snack some pieces and then add the rest to the frosting.

2c) Spread the frosting between on top of the first cake, then put the second cake on top (Important: cakes must be cold, otherwise frosting will melt.)

3a) For the second frosting, start by cutting the chocolate in little pieces. In a pot, boil the whipping cream. Careful! Don't leave the...

...whipping cream out of sight..it boils faster than you think. When you start seeing tiny bubbles take it off the heat and pour it over the chocolate...

3b) After 3 minutes stir until it's a smooth chocolate cream. Then put it in the fridge for around 30min. Stir every 5min.

4a) Spread the chocolate frosting on top of the cake. If it's not soft enough anymore, don't panic! Just heat it again for some seconds, then stir. Repeat until it has a good consistency.

4b) Decorate the cake with cookies, chocolate and marshmallows. For the pile in the middle I used some frosting as "glue".
Keep the cake in the fridge if you don't eat everything immediately :D.

What could go wrong:
-don't overmix the whipping cream, otherwise it will turn into butter

-chocolate frosting suddenly not soft enough anymore to spread over cake
SOLUTION: just heat it again for some seconds, then stir, repeat until it's soft enough to spread.
