Taste of Costa Rica in your quarantine -  Dulce de leche cake

Do you need a change of scenery? Then let this delicious dulce de leche cake take you to Costa Rica and sweeten your quarantine.

I know this cake is also typical in other countries but I had the honor of being introduced to it by some Costa Rican friends. :-)

Recipe/ Rezept:

Instructions:
1a) In a bowl mix eggs, butter and sugar.

1b) Add flour and water and mix again...

1c)...until all ingredients are well combined.

1d) Wash your hands (sing happy birthday twice... then you are allowed to continue.

1f) Knead the dough with your hands for a minute. Then take a tablespoon and form around 15 dough balls..

1g) ...(each made from 2 tbsp of dough more or less). Put them in the fridge for at least 30min.

2a) On a little piece of baking paper, roll one dough ball at a time into a big circle. Use multiple pieces of baking paper, so the first layers can bake already while you role out the next ones.

2b) If you want to have a perfect round shape, use e.g. a cake ring or a big cereal bowl to cut the circle (diameter 7-8 inches / 18-22cm).

2c) Using a fork poke some little holes into the dough. Then put the dough into the oven on the baking paper you rolled it out on.

2d) Bake at 400°F/200°C for 3-6min until it's light brown. In the mean time you can roll the next piece of dough etc.

3a) Right after baking each load(!): Stack the cake layers, always cake layer followed by dulce de leche, cake layer, dulce de leche etc.

3b) To make the cake look extra pretty, mix powdered sugar and some tsp of water or lemon juice.

Spread the icing on top of the cake in a fancy pattern. Buen provecho!
