Woohoo it's time for spring! Treat yourself to this awesome Pistachio-Carrot-Cake! Especially when spring weather keeps you waiting, this cake makes sure you get in a good mood!

An extra yummy addition are the marzipan carrots on top! Get ready for the next snaccident! :D

Recipe:
For the gluten-free version use gluten-free flour (rice-corn flour) instead and make sure all ingredients you are using are gluten-free.

Ingredients: 
Dough: 6 eggs -  1 1/4 cups sugar (260g) - 3/4 cup flour (90g) - 1 tsp baking powder -
             300g ground almonds - 300g carrots - organic lemon (skin of lemon) 

Icing: 1 1/2 cups powdered sugar (150g) - fresh lemon (juice: you can use the same one from
          above)

Decorations: 4 Tbsp chopped pistachios (50g) - 12 marzipan carrots

Instructions:
1a) Start by grating the peeled carrots.

1b) In different bowls, separate the egg whites from the egg yolks. Beat the egg whites until they are a firm foam.

1c) Add sugar to the egg yolks. Then grate some of the lemon skin and also add it. Then mix.

1d) Fold in 2/3 of the beaten egg white into the dough.

1e) Add 1 tsp baking powder to the flour and incorporate it into the dough.

1f) Now blend in the almonds.

1g) Then using a spoon, stir in the grated carrots.

1h) Using a whisk, fold in the rest of the beaten egg white.

2a) Prepare the bottom of a baking pan with baking paper and the sides with butter/oil and fill in the dough.

2b) Bake at 320°F / 160°C for approx. 45min. Use a fork to check if the dough is fully baked (no dough on fork = cake is done).

3a) Let the cake cool down for a while. Then squeeze the lemon to get the juice for the icing.

3b) Sift the powdered sugar and add the lemon juice one tbsp at a time. Stir after every tbsp and stop adding more lemon juice when it's a smooth glacé icing.

3c) Spread the icing on the top of the cake and the sides. Then quickly put add the pistachios and the marzipan carrots...

3d) ...before someone snacked them and before the icing has dried.
